In a small pot, add wheat berries over high heat. Top with 1 quart of water. Cover and bring to a boil. Lower heat and simmer for 40 minutes; drain and set aside.
Blanch broccoli in a medium pot of boiling water for 2 minutes. Transfer broccoli to ice cold water; set aside.
In a large skillet, heat oil over medium heat. Add onion and garlic; cook 8 minutes. Add tomatoes, oregano, zucchini, eggplant, salt and pepper; cook 15 minutes. Add the broccoli and wheat berries; cook 3 minutes. Serve.
