Description: Creamy beet and bean soup with a dash of dill. Sour cream and fresh parsley garnishes are a nice touch.

Ingredients:  Makes 9-3/4 servings (9-3/4 cups)

Measure beans into medium bowl. Add boiling water until 2 inches above beans. Cover. Let stand for at least 1 hour. Drain, Rinse, Drain well again. Transfer to 4 or 5 quart slow cooker
Add next 7 ingredients. Stir well. Cover Cook on Low for 9 to 10 hours or on High 4 1/2 to 6 hours. Remove and discard bay leaf.
Stir cream into flour in small bowl until smooth. Add to bean mixutre. Stir well. Cover. Cook on High for about 15 minutes until boiling and slightly thickened.
Add next 4 ingredients (Salt and pepper to taste). Stir well.
You can garnish individual servings with sour cream and parsley. Makes about 9.75 cups.
