Description: Turbo-Antioxidant Weight Loss Soup published in Woman's World April 14, 2010.
Ingredients:  Makes 8 servings (24 cups)

1/3  teaspoon
 
96  fl. oz.
 
2-1/2  teaspoons
 
2  teaspoons
 
1  teaspoon
 
1  lb.
 
8  cups
 
2  cups
 
1  cup

Directions:  
1.) Dice onions
2.) Scrub sweet potatoes to remove dirt, but leave skin.
3.) Cut sweet potatoes into 1/4" cubes.
4.) Saute onions in olive oil in the bottom of a very large pot, about 5 min.
5.) Add remaining ingredients, except red pepper, and bring to a boil.
6.) Reduce heat, cover and lightly boil until potatoes are soft, 12-15 min.
7.) When serving, garnish with red peppers.

Makes 8 - 3 cup servings.
Will keep in refrigerator up to 4 days.
