Place chicken breast in water and boil on stove until no longer pink throughout. Drain and place on cutting board to cool. Dice when cool enough to handle.

Meanwhile, heat oil in saute pan. Add diced celery, sliced carrots, minced shallot, and garlic. Saute until golden. At the same time, bring stock to boil and add gnocchi. Cook according to package directions. When gnocchi is cooked, add spinach to the same pot and heat just until wilted.

Add sauteed vegetables to gnocchi. Add diced chicken. Add undiluted cream of chicken soup. Stir and serve.
