preheat the oven o 450 degrees. line a large roasting pan with nonstick aluminum foil. add the carrots and potatoes. drizzle 1 tbsp plus 1 tsp of olive oil over veggies and season them with salt and pepper. toss to combine then distribute them even layer in bottom of pan, leaving room for the roast in the center.

Rub the roast allover with remaining oil and season it with 1/4 tsp salt and 1/4 tsp pepper. set in center of veggies and pour the tomato juice evenly over all. sprinkle with thyme. roast the meat carrots and potatoes for 18 min. then stir the potatos and carrots. seperate onion quarters into pieces. scatter them over the potatos and carrots. continue to roast until meat thermometer inserted in the center of roast reads 125 degrees. about 15 to 20 min.

carefully transfer roast to platter. cover loosely with foil for 10 min. if veggies are not tender rotate them and continue roasting up to 10 min more.
slice meat into thin slices against grain and serve with veggies.
