Thaw spinach
Combine spinach, ricotta and cottage cheese, nutmeg and chilli flakes
Cut mountain bread into 4 squares
Place mountain bread in layers into pie dish
Place filling inside
Sprinkle with pine-nuts and grated cheddar
Bake in moderate oven for approx 10-15 minutes or until golden
