Directions:  
In a 425F preheated oven, place sheet pan with tomatoes and a drizzle of olive oil over top with a sprinkle of salt. Let roast for 20 minutes. Let cool down 5 minutes
In large bowl, pour tomatoes and mash with fork. Add balsamic vinegar, dijon mustard, salt and pepper and stream in olive oil. Add onions, cucumber and romaine and toss.
