Ingredients:  Makes 2 servings (1 container)

Directions:

heat olive oil in a medium saute pan over medium heat (don't scorch the oil!)

chop peppers and add. you can also add chopped onion and/or diced eggplant

saute until slightly soft, add tomatoes, garlic and spices and cook until not too watery

using the back of a spoon, make 4 indentations in the sauce, gently break one egg into each indentation
5
sprinkle cheese over eggs and sauce
6
cover and cook until eggs are to your liking (we like ours just cooked enough to be not too runny, but you can cook them as much or as little as you like)
7
bring the pan to the table and serve directly from the pan
