Directions:  
peel and slice eggplant, salt and lay on paper towel to draw out moisture.
place on cookie sheet, drizzle with 1 T olive oil and roast at 400 for 15 minutes turning once. Take out to cool
saute onions in 1 T olive oil, add celery red peppers til soft.
add carrots and cook til tender
add mushrooms cook til tender
add frozen peas until heated through
add 1 T worcesteshire sauce and the soups

boil potatoes, when done drain and mash with skim milk and cheese
top veggie mixture with potatoes and bake at 350 for 20 minutes.
