in separate bowl beat eggs, add vanilla and raisins, stir and let set aside

soften coconut oil and/or smart balance

cream sugars and "butter" and set aside

in large bowl combine flours, salt, baking soda, and cinnamon

pour in eggs/ vanilla/ raisin sauce, creamed sugars, and oatmeal and stir

place teaspoons of dough rolled into 1" balls on ungreased cookie sheet

slightly flatten each cookie ball

bake for around 10 minutes until just brown (watch closely)

quickly remove cookies from sheet before placing on cooling rack

cookies come out of oven still quite soft, I like to flip them upside down on my wooden cutting board so they firm up a while before stacking on my cooling rack
