Rare problem with a diet

Okay, I know some people are going to hate me for this, but I'm having trouble eating enough! I do a lot of exercise and training, including one hour a week with a personal trainer.
On Saturday, when I "complained" that I'd like to beef up a bit, my trainer advised adding an extra 500 calories to my daily diet. I started tracking my typical day's food starting this morning, and I've just realised that I'm not eating as many calories as I thought; i.e. not enough to sustain the amount of exercise that I do.
