So moving right along.....making weekly adjustments is the best way not to feel overwhelmed with diet changes (at least for me).  Instead of removing everything tasty in life and creating cultrure shock, I make one simple change a week until I'm eating a near perfect diet before I know it. For example, take a week and cut out white bread and white pasta.  Switch over to whole wheat and see how it goes.  You have 7 days to get use to the idea and then think about your next change for the week.  This week I am working on the fat!  We are going to drop down to low fat butter, and extra virgin olive oil only!!! :)  IT'S A START!!!!
