Directions:  
1.season all pork chops with cajun seasoning,
2.brown in oil in a heavy bottom fry pan 3.place in 2 qt pot
4.saute onions in fry pan until lightly browned and add to pot.
5.deglaze the pan with chicken broth and water, scape all bits while simmering water.
6. Cover pork chops with broth,
bring to boil
7. turn down to simmer for 15 minutes
8. remove pork and set asside
9 add all vegetables and rice stir lightly and bring to boil.
10 reduce to simmer and place pork on top of rice simmer covered for 18-20 minutes adjust with salt and pepper to taste.
