Preheat oven to 350 degrees F.

Line two large baking sheets with parchment paper or non-stick foil.

Remove stem from kale bunch, remove ribs and chop into bite-size pieces.

Place kale in a large bowl, drizzle with olive oil and toss until oil has evenly coated each piece of kale. Add chili powder and salt, then toss again.

Transfer kale to baking sheets and arrange in a single layer. Bake until crispy and edges begin to curl and brown (this should take about 12 minutes).

Remove kale from oven and let cool for 2 minutes. Transfer to a bowl and toss with cheese.
