Pour water into a large pot and add artificial sweeteners (using a combination of artificial sweeteners greatly improves flavour. In a small bowl mix together the xanthan gum, cinnamon, salt and nutmeg and add to the pot. While wisking bring mixture to a boil and cook until thickened. Remove from heat.
Prepare apples by peeling, coring and slicing. In a large bowl toss the prepared apples with the lemon juice. Add prepared apples to pot.
Bring to a boil. Reduce heat, cover and simmer until apples are tender, about 8 to 10 minutes.
Cool for 30 minutes.
If not using immediately may be frozen in individual batches. For pies line pie plate with foil then fill with pie filling. Freeze then remove from pie plate and put in freezer bag. When wanting to use, remove from freezer and place in crust lined pie plate then cook as usual. No need to thaw. Will keep in freezer for 1 year.
