Description: A blend of corn, cheese & bacon in a moist corn muffin, what could be better?? Original recipe from Schwans I just lowered the fat some.

Directions:

Preheat oven to 400 degrees. Line muffin tins with paper liners. Set aside.

Combine corn muffin mix, egg, milk, corn and Parmesan cheese. Mix well.

Divide batter among prepared muffin cups to fill each half full.

Mix shredded Cheddar cheese and chopped bacon in a small bowl and sprinkle evenly over the the muffins.

Bake for 15-20 minutes or until a toothpick inserted into center comes out clean.
