Thinly slice celery, mushrooms, scallions & pork, chop water chestnuts

Preheat large fry pan to medium high heat, spray with cooking spray

Add 1 tablespoon soy sauce, Stir fry pork 60 seconds

add scallions, celery, mushrooms and water chestnuts

Sauté, lower the heat to low, continue to stir

microwave the minute rice, when done stir into the fry pan mixture

Fold in egg whites (I use egg beaters liquid eggs) pour over mixture, let set a few seconds then blend in the egg
º Add soy sauce and pepper to taste
top with chopped tomatoes or green scallions (optional)
serve with dinner salad, seafood, or just by itself, I like mine with scallops
