Freeze tofu in package for 3 hrs. – 3 months.

Bring a large pot of water to a fast boil. Remove tofu from package (you may have to place it in hot water to get it out) and place in boiling water. After water returns to a boil, simmer for 15 min.

Remove tofu and plunge into cold water to cool.

Slice into ½ - 3/4 inch pieces. Squeeze the water out of them by hand, like they are little sponges.

Put oil into pan and heat until hot. Put in tofu, in one layer. Cook 5 minutes, turn, cook 3 minutes, turn, cook 3 minutes. Season with your favorite sauce.

Tofu will be tender in the middle and crispy on the outside, and will soak up other flavorings.
