Directions:
1
Finely chop chives and 3-4 scallions.
2
Combine everything except crab meat.
3
Empty crab into strainer; check meat for any shell parts. Gently fold in crab to mixture.
4
Add salt and pepper to taste. Not much salt will be needed since the crab is salty.
4
Gently pack mixture into 1/3 c measuring cup. Turn into hands, and gently press. Don't squeeze them too thin, or they will fall apart during cooking.
5
Add oil to hot pan; gently lay in crab cakes. Cook a few at a time so they can be easily removed.
6
Cook 5-7 minutes or until golden to dark brown. Flip once; cook 5-7 minutes more.
