Description: Good for you, great tasting flax seed muffins with pumpkin. You can substitute applesauce for pumpkin and add fruit (raspberries or blueberries - or whatever you want!).

Directions:  
Mix sugar, vanilla, baking powder, baking soda, salt cinnamon, egg, pumpking (you can substitute applesauce if you want), milk and oil in a bowl. Mix well, Add ground flax seed, and both white and whole wheat flour. (If living in high altitude, you may need to add 1/4 cup more flour.) Divide into 12 baking cups. Sprinkle chopped pecans on top. Bake at 400 degrees for 18-25 minutes, or until toothpick inserted in middle comes out clean.
