First Week Over

The first week I gained a pound. Not sure what I did wrong. I promised to try vegan for a month so I will continue on this plan. I'm going out this week to an Indian restaurant. I've already looked at the menu so I know there are plenty of healthy, vegan choices.

The blood sugar has been wacky. Over 200 in the morning - but no this morning - 185 and that's with the popsorn snack I had last night before bed. i expected to be high this morning, really high, but not. Ok, that good. ...

Well, yesterday was another confusing blood sugar day. I hit a high BS about 4 hours after breakfast when I about ready to have lunch. Yesterday my BS went from 148 in the morning to 297 at 10:45. What???? And then at 3 pm I'm down to 73! Oh, this is so frustrating. 

Today, I started at 202 and then went up to 265 at 11:00. I took my insulin (10 units) so why these big jumps before lunch? I am leary of taking any insulin now because of the crash I had yesterday.

Will the right blood sugar please stand up?

I don't know if you know this, but blood sugar can be the worst rollercoaster ride where the operator has left the booth and there you are - stuck going round and up and up and down. You're doing everything right and yet you are stuck. So this morning, 6:32 AM:
BS = 203 Insulin = 10 units
Breakfast consisted of polenta, sugar free apple pumpkin butter and two manderin oranges.

11:00 Snack = 1 cup Creamy Corn and Lemongrass soup (110 calories, 3.5 g fat)

My wife and I are reading The China Study. The book is wtritten by a Phd from MIT who started his career studying the connection between diet and disease, specifically liver cancer. Basically, his research shows that eating meat causes cancer and other diseases such as diabetes. Which bring me to why I am eating vegan for one month.
