Description: Protein and fiber packed (and easily convertible to gluten free if you have celiac disease. These can be kind of tricky the first couple times you make them...the trick is to a well greased griddle and medium/low heat.
Ingredients:  Makes 2 servings (6 each)
1/2  cup
2  teaspoons
1/4  teaspoon
1  tablespoon
1  tablespoon
1/2  cup
1  teaspoon
2  tablespoons

Preheat griddle over medium flame. Mix dry ingredients (except nuts) in a small bowl.
In a large bowl, mash banana and mix with eggs, cottage cheese, and vanilla.
Add dry ingredients to banana-cottage cheese mixture. Fold in chopped nuts.
Reduce heat to low and grease griddle with butter. Pour 1/4 cup portion for each pancake.
After about 3-5 minutes, gently scrape spatula around perimeter of each pancake to loosen edges, then flip. Cook until browned on both sides.
Top as you wish...I like a bit of coconut milk and mixed berries.
