heat oven to 350 and butter or spay with cooking spray an 8 inch square pan. heat butter on low heat until melted. remove from heat and stir in coca powder, let cool.

in a small bowl, whisk together flour, baking powder and salt.

stir in sugar and sweet potato, then mix in egg and vanilla

add flour mixture to cocoa mixture until no traces of flower mixture remain. spoon into prepared pan, smooth on top. mixture will be thick. bake about 20 minutes until the brownies look barely dru and a knife inserted comes out almost clean. cool before eating
