Place pieces of bread on a flat work surface and apply pesto evenly among 1 side of of each of the bread slices.

Divide turkey, roasted pepper strips, and cheese among 4 of the bread slices. Place remaining bread slices on top of sandwich, pesto side down.

Gently brush the outsides/ tops of sandwiches with olive oil.

Heat a large skillet over medium heat. When the skillet is hot, add sandwiches then cook until each side is a golden brown and cheese has melted. Press down occasionally, cooking should take about 4 minutes per side.
