Directions:  
Slice the eggplant. Brush with 3 tablespoons olive oil and roast at 350 for 8 minutes. Turn them and roast another 10 minutes.
Place some (scant) marinara on the bottom of a 9 X13 pan. Layer eggplant on top.
Mix ricotta, egg, cottage cheese, parmesan, and 4 ounces Italian blend cheese with salt and pepper. Maybe a bit of fresh basil...
Layer 1/2 cheese mixture on eggplant.
Layer 1/2 turkey sausage (cooked)
Layer 1 cup marinara.
Repeat layer
Top off with layer of eggplant covered with remaining marinara and remaining cheese.
Bake at 350 for 1 hour.
