Preheat oven to 350 degrees. Spray a baking pan with non-stick cooking spray and set aside.

Flatten both chicken breasts till they are about 1/4 inch thick.

Crush Chex cereal until its a bread crumb-like consistency. Season with salt and pepper. Can also add onion and garlic powder if desired.

Coat chicken on both sides first in the egg beaters original, then in Chex mixture.

Lay on baking pan and lightly spray with non-stick cooking spray. Repeat with other chicken breast.

Place in oven and cook for 15 minutes. Flip chicken and spray with non-stick cooking spray. Cook for 20 minutes longer until outside is browned and crispy.

Take out and serve with homemade white gravy. Enjoy!
