Description: Chewy dry crust, sticky moist center. Mild fruit flavor; not at all crumbly or rich. Note: if you add the nuts there will be some fat.

Directions:  
Preheat oven to 350. Butter a 9x5 loaf pan.

In the large mixer bowl, beat the eggs and banana together.
In a smaller bowl, whisk the flour, sugar and baking soda together.
With the mixer on low, slowly add the dry stuff to the wet stuff.
Mix on medium until smooth; add nuts, if desired.
Pour batter into loaf pan; bake 1 hour.
