soak beans over night

dice bacon and cook over medium heat till done, remove about half the bacon fat (simply tilt the pot and spoon some out), add garlic and onions, cook for 1 minute, add celery and carrot, cook for 2 minutes. stir often

add broth and beans, reduce heat to low, cover, simmer for 90 minutes or until beans are soft. stir occasionally

add one 10 oz. package of frozen chopped spinach, turn up heat to medium, stir occasionally, cook for about 10-15 minutes or until the spinach is completely thawed and has cooked for 5 minutes.
