Directions:

In a large Dutch Oven/casserole fry bacon strips.

Add flour dusted beef cubes, shallot and sliced onion and continue to fry.

If desired add brandy and set alight.

Add red wine & stock. Add seasonings and garlic. Cover and simmer gently for at least 2 hours

Add 12 pearl onions sauteed in butter, 20 minutes before end of cooking. Just before serving, bind the sauce with 1 TBS kneaded butter.
