Heat half of the oil in a wok or frypan over a moderate to high heat. Stir-fry the meat in batches for 2-3 minutes or until browned, adding remaining oil when necessary. Return all the meat to the pan, add the curry paste, fish sauce, lime juice and brown sugar, toss well so all meat is coated. Add the snow peas and basil, cook for a further 1-2 minutes. Remove from heat and serve with rice.
