Put 2 lbs lean stew beef and baby carrots into 6 qt slow cooker. Set to High for 5 hours, or low for 8 hours.

While slow cooker is heating up, mince the garlic, chop the onions and quarter the baby red potatoes. Add garlic, onions and potatoes to the slow cooker with the meat.

Add the tomato paste, Italian seasoning, and bottle of red wine to the slow cooker. Note: half the wine can be substituted with beef stock or broth.

When there is about an hour left of cooking time, chop the kale and add to slow cooker.
