If using dried beans, double the cooking time, Soak dried beans at least overnight before cooking, drain and rinse, then cook for 1 1/2 to 2 hours. Drain beans

Chop veggies while beans are cooking, or ahead of time. If you like really hot, add some finely chopped jalapeno peppers.

Heat olive oil (or water) in bottom of large stew pot, then toss in chopped veggies & garlic and saute/stir fry, just until onions start to turn translucent

Add Diced tomatos and tomato sauce, kidney beans, and water (to desired consistency) and bring pot to a boil

Combine remaining spices in a small bowl and add to pot, stirring in thoroughly.

Reduce to simmer and cover, 1-2 to allow spices to permeate and so you can make final adjustments. Stir every 15-20 minutes, testing spice and adjusting to taste.
