Preheat oven to 350 degrees F. Lightly spray an 11x7 inch baking dish with cooking spray.

In a medium skillet over medium heat, heat oil and add onion and cumin. cook until onions are tender. Stir in black beans.

Place about 3 tablespoons of the bean mixture in the center of each tortilla. Top with 1/4 cup monterey jack cheese. Roll up tightly, place steam side down, in baking dish. Pour enchilada sauce over tortillas. Spray a sheet of foil with cooking spray and cover the baking dish spray side down.

Bake for 30-35 minutes. Sprinkle with cheddar cheese and serve.
