Spray two pans with olive oil. Heat one pan to medium. Don't heat the other yet.
Add garlic to Pan#1. Once it sizzles, add carrots and cook 2 minutes.
Heat Pan#2 to medium-high. Add other veggies to the carrots in Pan#1 and cover.
Beat 2 eggs and pour into Pan#2. When the bottom is cooked, pour half the veggie mixture from Pan#1 onto half of the omelet. Add 1/2 of the cheese and 1/2 of the pizza sauce. Close omelet. Turn off the heat in Pan#1.
Finish cooking omelet, then repeat with the other 2 eggs and the other half of the ingredients.
