Preheat oven at 180ºc/350ºf/gas mark 4. Blanch the leeks,broccoli and red pepper in boiling water for 3 minutes.
In a pan gently heat the milk,reserving 2 2tbsp. Add the reserved milk to the cornflour,stirring well. Add the cornflour paste to the warmed milk. Mix and heat to thicken. Add the cheese. Place the vegetables in an oven proof dish,pour the sauce over and bake for 25 minutes or until set and golden.
