Description: tomatoes, garlic, shallot, oil, vinegar, spices-good on slices of Italian bread or on salad-Best to use hard tomatoes like Roma, hothouse, etc.- usually the cheaper ones. Remove seeds before chopping.
Ingredients:  Makes 6 servings (1-1/2 cups)

Directions:

Chop tomatoes to about 1/4" dice. Mince and chop all herbs and the shallot, except for crushed red pepper flakes. Crush them in your palm with your thumb.

Put all vegetables and herbs in a bowl and add the oil and vinegar. Add salt and pepper to taste.
3 Serve on toasted sliced baguette or on salad.
