Cook chicken breasts through using your favorite method. Set aside to cool. Then shred with a fork (or your hands).

In soup pot, add oil and add minced onion. Saute until soft, about 5 minutes. Add minced garlic and saute another minute or two.

Add stock, water and hot sauce to taste. Add chicken. Add cheese and stir frequently until completely melted.

Bring to a boil, then reduce heat and simmer for at least 20 minutes.
Optional
Garnish with your choice of crumbled tortilla chips, cheddar cheese, chopped green onions and/or sour cream.
