Buttermilk Pancakes

2  cups		unbleached flour
1  cup		whole wheat flour
3  tablespoons		sugar
3  teaspoons		baking powder
1-1/2  teaspoons		baking soda
3/4  teaspoon		salt
3  cups		1% sour milk
1/2  cup		2% milk
3		eggs
1/3  cup		butter melted

In a large mixing bowl, combine dry ingredients

In a separate bowl, beat together sour milk, milk, and eggs

Heat a lightly oiled griddle over med high heat until a drop of water sizzles

Beat melted butter into milk and eggs, add to dry ingredients and stir just until moistened.

Pour batter (approx 1/2c) onto hot griddle. Fry until air bubbles form on tops of pancakes. Turn over and fry until brown.

Serve at once with butter and maple syrup or keep warm in a 200 degree oven
