Cabbage Roll Soup

1		medium onion
2  tablespoons		tbs olive oil
1		stalk celery diced
1		medium carrot peeled and coarsely grated
1  lb.		ground pork
1		clove garlic minced
6  cups		savoy cabbage diced
56  ounces		unico canned whole tomatoes
1  cup		chicken stock
1/8  cup		wine vinegar
1  teaspoon		tbs paprika
2  teaspoons		celery salt
2  teaspoons		bay leaves
16  fl. oz.		tbs prepared horseradish
1/2  cup		long grain brown rice

saute onion, celery, carrots and olive oil in soup pot for 5 minutes over medium heat until onions are almost translucent
Add ground pork and cook through thoroughly, stir often.
Add garlic and cook one minute
stir in cabbage, add tomatoes, stock, vinagar, horseradish, paprika, celery salt, bay leaves, and rice and stir.
Cover the pot and simmer util rice is fully cooked about 40 minutes
Season to taste, remove bay leaves.
