Bring 4 cups of water to a boil. Add rice; stir. Reduce heat, cover, and simmer for 20 minutes.
In a large skillet, heat butter over medium high heat. Brown chicken in butter. Season with salt. Remove chicken from skillet; set aside.
Add rice to skillet; stir to brown. In a small skillet, scramble eggs. Add egg to large skillet with chicken, mushrooms, green onions, and soy sauce. Stir fry for 3 minutes. Season with black pepper.
