Pound the chicken breasts until they are about 1/4-inch thick.

Combine garlic and herbs. Cut the butter into four equal parts and coat each with the herb mixture. Place each pat of butter onto a chicken breast and roll up. Secure with a toothpick, if needed.

In three shallow pans, put the flour in one, the eggs in another, and the bread crumbs in the last. Squeeze the lemon over the chicken and season with salt and pepper, if desired. Roll the chicken in the flour, then the egg, then the bread crumbs.

Saute in a skillet over medium heat for about 20 minutes, turning the chicken after about seven minutes on each side.
