Chicken & Mushroom Omelet with Provel Cheese

2		large eggs
1  tablespoon		Fat Free Half & Half Cream
1  pinch		Salt & Pepper
1  cup		Crimini Mushrooms - Fresh
1/4  cup		Green Onion - Chopped
3  ounces		Grilled Chicken Breasts [recipe]
2  tablespoons		Shredded Provel Chese
1  teaspoon		Olive Oil

Saute mushrooms in oil. add green onions. stir in hot pan and remove vegetables. Spray skillet with a little Pam. whip eggs and FF half n half and seasonings. Pour into skillet. cook on low in covered skillet for about a minute or so, until eggs just begin to set. Add vegetables, meat and cheese. Cover and allow to cook until eggs are set, and cheese is melted. Fold and serve.
