Preheat oven to 375 degrees F. In a shallow dish combine flour with 1/2 teaspoon salt and 1/4 teaspoon pepper. In a bowl, beat eggs together with 2 tablespoons water. Place bread crumbs is a separate shallow dish.

Dredge chicken in flour, then dip into egg mixture, and lastly roll in bread crumbs. Place on a baking sheet lined with wax paper.

In a large skillet over medium heat, heat 2 tablespoons of oil and cook 1/4 of cutlets. Continue process by adding 2 teaspoons of oil at a time for each batch on chicken until finished.

In a large baking pan, pour in half a jar of spaghetti sauce. Place half of the cutlets on top of sauce. Cover with half of the parmesan and half of the mozzarella. Layer with other cutlets and sauce, then sprinkle with remaining parmesan and mozzarella. Bake for 20 minutes.
