Preheat oven to 450 degrees F. and line a baking dish with aluminum foil. Toss the chicken in 1 tablespoon live oil, paprika, and a dash of salt and pepper. Spread in a single layer on the baking sheet. Roast for 15 minutes or until chicken has cooked through. Transfer chicken to a cutting board.

In in medium skillet over medium heat, toss onion with 1 tablespoon oil and saute until golden. Add garlic, salt and pepper to taste. Cook for another minute. Remove from heat and stir in cherry peppers.

Brush the insides of hoagie rolls with remaining oil and bake in baking dish for 2 minutes. Thinly slice chicken and divide among the rolls. Top with onions and cheese. Return sandwiches to oven and cook until cheese has melted.
