Chocolate Maca Truffles

35  pieces		raw almonds
1		large date
2-2/3  fl. oz.		to ½ cup unsweetened almond milk
2  tablespoons		raw cacao or cocoa powder
2  tablespoons		maca powder
2  tablespoons		agave nectar, honey or maple syrup
1  cup		gluten-free Rice Krispies or similar cereal

Place almonds, dates and 1/3 of a cup of unsweetened almond milk into high speed blender or food processor. Turn on and quickly increase to highest speed. Process for 1 minute. Consistency should be thick like dough. If it is too thick, add the additional milk.
By hand, stir in 1 T cacao or cocoa powder, 1 T maca powder, sweetener and cereal.
Refrigerate for 15 minutes to firm up batter just a little. Roll into 1-inch balls and pop into freezer for just a few minutes. Remove from freezer and roll truffles in mixture of 1 T. cacao/cocoa and maca powder.
These are best stored in the refrigerator.
