Directions:

Heat Oil over medium heat in a large pot or stockpot.

Saute onion until translucent and soft.

Add potatoes and mix to coat with oil; saute 1 to 2 minutes.

Add salt and pepper to taste (I do not use any).

Cook until potatoes are soft.

Add rice milk and puree until smooth.
