Preheat oven to 350 degrees.
Measure out 1/2 cup walnut halves. Chop. Add all dry ingredients in one bowl (to include walnuts and coconut). Melt butter in microwave. Add yogurt, bananas, egg, vanilla, and melted butter. Stir until mixed. use 1/4 cup measuring cup to fill muffin tins (lined with papers) until 3/4 of the way full.
Bake for 20 to 35 minutes (depending on your oven) until golden brown and toothpick inserted in center comes out clean.
