Combine first four ingredients to make sauce.
Cut chicken into strips.
Heat wok over high heat. Add 1 tablespoon of oil, and swirl to coat. Add half of the chicken to the wok and stir-fry for 2 minutes. Spoon cooked chicken into bowl. Repeat with remaining chicken, adding a teaspoon more oil to wok.
Add remaining oil, swirling to coat. Add onion, ginger, and garlic; stir-fry 1 minute. Add curry powder and chiles; cook 30 seconds. Add sauce and chicken to the wok; stir-fry 1 minute. Add cashews; heat. Spoon into serving dish. Sprinkle with cilantro and serve over rice.
