Description: I found this recipe on EatingWell's website, absolutely love it! Tweaked a couple of ingredients for my preference, like using bamboo shoots instead of sprouts, and using walnuts instead of almonds. It's like a fruit, chicken salad with plenty of protein.

Cook your chicken first by poaching it in a medium skillet or saucepan. Bring the water to a boil, cover and reduce heat to low. Once the chicken is cooked through, set aside, and chop into pieces.

Combine the yogurt, mayonnaise, and curry powder in a large bowl. Then add the chicken, pear, celery, cranberries, almonds, and sprouts.

Take and stuff your pita bread "pockets" with the salad and voilà, you are ready to eat.
