Directions:  
Mix together egg whites and skim milk in a medium bowl and soak chicken breast.
Grind oatmeal and coconut in a processor and add seasonings and ground flax seed. Set aside.
Coat dredged chicken breast with oatmeal mixture and place on parchment lined pan. Bake in oven 30 minutes or until chicken is cooked through.
